This weekend, my sister and I headed up to Austin to celebrate my future sister-in-law’s bachelorette party and festivities. It was so much fun and we were lucky to have nice weather. If you have not heard, Houston has been flooding pretty badly and pretty much all of Texas has been hit with some serious storms. Pretty much everything we did centered around the outdoors like grilling and playing games on the patio, going to various wineries and BBQ for lunch, to walking around 6th Street bar hopping the night away. Who says vegans have nothing delicious to eat? Certainly not me. Not with these Vegan and Gluten-Free Cinnamon Rolls. Today I am going on day five of my Vegan Challenge, and I must say, aside from a few accidental blunders on day two, things are going very well. It is difficult to say the impact it has made on my body yet (it has not even been a week), but I am sure that after I get finished with my hectic week ahead, I can focus on fine-tuning my body and health. Cooking dinner during the week (especially a week during exams) can sometimes get pushed on the back burner. That is why it is nice to have quick, simple, and healthy recipes to make for dinner. One of my go-to’s is a Dairy-Free Avocado Quesadilla complete with salsa and Blue Corn Tortilla Chips.
One weekend ago I visited Trader Joe’s for the fist time ever. I have always heard glorious stories about it and how it is deemed “the poor man’s Whole Foods.” Well, I love Whole Foods (obsessed really) and I am a poor college student… so I thought I would go check it out while I was home in Houston for the summer! Hello all! It is day two of my Circuit Series! (If you missed day one, find it here!) I completed the second rotation this morning in under nine minutes and burnt about 40 calories (keep in mind that every body is different and this is just an estimate based off of how I performed*).
