omelet us catch up--Journey for JessiI apologize for being so behind on my posts, but now that things are slowly settling into place after the move, I can go through all of my recipes and pictures and turn them over to this blog.  The last thing I did before moving back to Colorado was have brunch with a really really good friend of mine before we went our separate ways again.  He is one of those people that you can not see for months and pick right back where you left off, which is 100% our case.  He let me pick my favorite brunch place at home, La Madeleine.  That omelet was the beginning of a new obsession of mine. kick-start circuit series: rotation five

Rotation Five I have almost given you all of my morning wake-up workouts!  After this one, just one more to go!  If you happened to miss the the other four, check them out!  

Notice that this rotation is repeated four times (the others were usually three).  This is because when I did this circuit only three times, it took me six minutes and burnt 20 calories (*based on my body and level of exertion).  Maybe I just was not feeling “it” this morning, but my heart rate stayed pretty low.  If this is the case with you as well, do my recommended four repetitions.  As always though, listen to your body.  You know it best. kick-start circuit series: rotation oneGood morning!  Today I am going to start my Strength Circuit Series!  These are my various workouts I do first thing in the morning right after I wake up.  They are not meant to be super crazy cardio or extreme weight lifting circuits, just something to wake me up and kick-start my body and metabolism.  There are five rotations I go through, one per day.  When I have completed all five (five days), I will just begin again on rotation one the following day.  I work based off of rotations, rather than designate Monday to one circuit, another to Tuesday and so on, because this allows me to listen to my body.   Continue reading

detoxify

green detox smoothieMy detox yesterday helped immensely.  My stomach has returned to normal today after loading it with a mish-mosh of foods on Father’s Day.  It all started with breakfast.  I woke up and immediately began drinking water.  This is extremely important when trying to flush out your body.  I filled up my water bottle about three times yesterday morning. It is also important to start your day off on the right note—meaning breakfast.  I needed fuel for my day, but something that would not upset my already-bloated stomach.  I decided on a Green Detox Smoothie.

paleo strawberry shortcake cupcakesThis post will be just a quick recipe because I think I spoiled myself a little too much yesterday…  I have a horrid habit of thinking that “cheat days” will not affect my body what-so-ever, but man, am I wrong every time.  Yesterday was no exception.  I had my cinnamon streusel coffee cake yesterday for breakfast.  It started off as a little piece, but escalated into “just a sliver more” very rapidly.  From there, my family said they would like to have strawberry shortcake for dessert that night, so I headed off to the store for ingredients and picked up a few extra things along the way–including pistachios for my dad, it was Father’s Day after all.  Now, you might be thinking, “pistachios aren’t unhealthy,”  but nuts are my weakness and the empty shells began to add up…  That, added up with the mindless noshing and “taste-testing” while making the cupcakes, made for an unhappy tummy last night.  But, today is a new day and as I sip my water and get ready to make my green detox breakfast smoothie, I will post the recipe for my dessert last night.

thank you dad

246575_3908535045595_1645239290_nThis one goes out to all the dads out there!  What would we do without them?  I know I would be lost without my dad.  He is my rock and my hero.  Some say we have identical personalities: short Italian temper, quirky humor, engineers… the list goes on.  I am me because of my dad.  He always stressed the importance of school and learning, thus allowing me to pursue my college education.  He was the one that initially encouraged my fit and healthy lifestyle.  I grew up going to the gym with him; even when I was way too young to actually workout, I still went to the gym and watched. summer mornings

summer mornings--Journey for JessiDespite the fact that summer usually means sleeping in late for most college students, I cannot bear the notion.  Why waste the most beautiful part of the day?  The promise of a fresh start every morning with the whole day ahead of you.  I think my body knows this and that is why I cannot sleep in past 9 am–and that is still pretty late for me.  I average around 7:30 am unless I set an alarm to go for a run.  In Houston, the day heats up pretty quickly, and if I have not hit the pavement before the sun makes its appearance, I am in trouble. This was my dinner last night.  My mom has been recovering from surgery, so I have taken over her kitchen.  I don’t mind it what-so-ever; I feel so relaxed while cooking and my creative juices really start flowing.  Last night I made a version of baked zucchini and tomato tian.  I adapted some recipes to create a version that would suit my palette and my mom’s sensitive stomach.
