gluten-free vegan cinnamon rolls--Journey for JessiWho says vegans have nothing delicious to eat?  Certainly not me.  Not with these Vegan and Gluten-Free Cinnamon Rolls.  Today I am going on day five of my Vegan Challenge, and I must say, aside from a few accidental blunders on day two, things are going very well.  It is difficult to say the impact it has made on my body yet (it has not even been a week), but I am sure that after I get finished with my hectic week ahead, I can focus on fine-tuning my body and health.  Last week was a bit stressful on me, so that is why I decided to treat myself to a yummy Sunday breakfast. omelet us catch up--Journey for JessiI apologize for being so behind on my posts, but now that things are slowly settling into place after the move, I can go through all of my recipes and pictures and turn them over to this blog.  The last thing I did before moving back to Colorado was have brunch with a really really good friend of mine before we went our separate ways again.  He is one of those people that you can not see for months and pick right back where you left off, which is 100% our case.  He let me pick my favorite brunch place at home, La Madeleine.  That omelet was the beginning of a new obsession of mine. kick-start circuit series: rotation oneGood morning!  Today I am going to start my Strength Circuit Series!  These are my various workouts I do first thing in the morning right after I wake up.  They are not meant to be super crazy cardio or extreme weight lifting circuits, just something to wake me up and kick-start my body and metabolism.  There are five rotations I go through, one per day.  When I have completed all five (five days), I will just begin again on rotation one the following day.  I work based off of rotations, rather than designate Monday to one circuit, another to Tuesday and so on, because this allows me to listen to my body.   Continue reading

summer mornings

summer mornings--Journey for JessiDespite the fact that summer usually means sleeping in late for most college students, I cannot bear the notion.  Why waste the most beautiful part of the day?  The promise of a fresh start every morning with the whole day ahead of you.  I think my body knows this and that is why I cannot sleep in past 9 am–and that is still pretty late for me.  I average around 7:30 am unless I set an alarm to go for a run.  In Houston, the day heats up pretty quickly, and if I have not hit the pavement before the sun makes its appearance, I am in trouble.
