Hello beautiful humans!
It’s day 26 on my Whole30–26!
I can’t believe it. If you can’t tell, my spirits are high and my energy is THROUGH THE ROOF! (I challenge you to count the number of exclamation points in this post… *wink*)
Here is a recap of the last few weeks, plus a delicious omelette… Continue reading
Remember me raving about meal prep day yesterday? Well here is one of those recipes that is totally saving me this week, Bacon Egg Breakfast Cups. It was my first day back to classes after winter break and my schedule was hectic all day. The only solace I had was knowing that on my hour meal breaks that I already had some delicious food waiting for me at home. Continue reading
Happy Saturday! It was a great day of training and getting back on track with my meals. After one hiccup today while training (eat protein before squatting people—not just a green smoothie), I got back to the grind and successfully rounded out my first week on my new program. Whoop! Plus, after a some inspiring words from the Whole30‘s Stephanie, I managed to control my snacking and cravings more today than I have been. Continue reading
Uh-oh. I have a confession. I have been “healthy” binging. I am not saying that binging is healthy by any means. What I am saying is that I have been consuming a lot of healthy foods (mostly healthy fats) to an excess. Yeah, it’s time to stop that. Continue reading
Yes. Yes, this is another breakfast post. I make a lot of omelettes, but this is by far one of my best yet– the tomato basil omelette! Oh yum! Last week week when my parents came for a visit, we went to a local diner. The wait was long, but well worth it. Everything was so fresh and tasty to give that homey feel. I ordered an egg white omelette there (surprise), but I got the most unique one on their menu; it had spinach, tomatoes, almonds with a drizzle of vinegar. It was delicious! That is where I got my inspiration for this morning’s creation. Continue reading
Easter is beyond my favorite holiday. The spring season, the meaning, the feeling it brings inside me–everything about it just cleanses me and gives me an ignited appreciation for life and all the little things it brings. I love Easter with all my heart, and why wouldn’t I when this holiday reminds people of new life and rebirth and hope? I must admit to feeling emotional on Easter. It’s embarrassing to admit, but I usually tear up in Church. This Easter I have even more “feels” in me. One of my favorite Easters was a few years back to my freshman year when I was warmly invited to spend Easter with Jessi and her wonderful family. Continue reading
I am so sorry to all of my tremendous followers. I have been no where to be seen on here on Journey for Jessi lately. For those of you following my Instagram, you know I haven’t been completely missing in action. You have seen so many tidbits lately that I owe it to you all (and myself) to fill in the pieces. Continue reading
I LOVE tea. I have it at least 1-2 times a day. There are so many kinds and amazing flavors to try. When I discovered Buddha Teas, my tea-loving heart rejoiced! Because there are so many types and brands of teas available, I like to make my tea time special. Buddha Tea does just that for me!
Back in Colorado, but my breakfast (brunch) game is stronger than ever. Maybe it is just because classes haven’t started yet and I am feeling energized and creative! Yesterday, I woke up late and decided to wait for lunch, but I was still craving breakfast foods. As a compromise, I made gluten-free, Veggie Brunch Burritos! Continue reading
I have been taking more time to reflect and enjoy the little moments in life. You know, part of my resolutions and all that. It is only day five of the new year, but my newly improved positive outlook on life, I can already tell, will make this year one of my best yet! Only day five and I already feel happier, more in control of my own life and plans for my future. I have goals, I have dreams, I am inspired! Continue reading
