Remember me raving about meal prep day yesterday? Well here is one of those recipes that is totally saving me this week, Bacon Egg Breakfast Cups. It was my first day back to classes after winter break and my schedule was hectic all day. Here was my breakfast from the other day. It consisted of 1/3 cup of liquid egg whites, raw almonds and Applesauce Oats.
♦ 1/3 c oats (can be old-fashioned or quick; I use a combo of both)
♦ 1/3 c unsweetened applesauce
♦ cinnamon to taste
Just mix all ingredients together and microwave for 1:30-2 minutes. Top with more cinnamon if desired and enjoy!

Classes resumed this week for me! Yay college! I actually am really excited about this semester. What has changed? The more difficult classes? Longer and busier schedule? Nope! My new outlook on life! Remember my New Year’s Resolutions? Yeah, those are still going strong–if not stronger than ever!
Y’all, I could not be happier this morning! Can you just look at these Texas waffles? Pure heaven! I cannot tell you how excited I was that these turned out the way I had hoped! Yayayay! Rejoice with me! You can take the girl out of Texas, but not the Texas out of the girl y’all!
