Yes. Yes, this is another breakfast post. I make a lot of omelettes, but this is by far one of my best yet– the tomato basil omelette! Oh yum! Last week week when my parents came for a visit, we went to a local diner. The wait was long, but well worth it. Everything was so fresh and tasty to give that homey feel. I ordered an egg white omelette there (surprise), but I got the most unique one on their menu; it had spinach, tomatoes, almonds with a drizzle of vinegar. It was delicious! Here was my breakfast from the other day. It consisted of 1/3 cup of liquid egg whites, raw almonds and Applesauce Oats.
♦ 1/3 c oats (can be old-fashioned or quick; I use a combo of both)
♦ 1/3 c unsweetened applesauce
♦ cinnamon to taste
Just mix all ingredients together and microwave for 1:30-2 minutes. Top with more cinnamon if desired and enjoy!

I have been both single and in relationships for Valentine’s day, so I speak from experience when I say that Valentine’s Day is a very weird holiday on both parts. V-day has always just be eh for me. I don’t hate it, I am not its number one fan. In my opinion, it is just a holiday in which everyone gets all stressed out and–more often times than not–just straight up sad on the 14th. Please people. Calm down. If you have a significant other, just relax. Spend the day together. Do not build these huge expectations of grandeur. My best Valentine’s day with my boyfriend at the time was a night spend at home making dinner together and watching Scrubs. If you are single, oh my gosh! Enjoy it! Once I embraced being single (and happy) this Valentine’s Day, I am more in favor of this day of love than I used to be.
I LOVE tea. I have it at least 1-2 times a day. There are so many kinds and amazing flavors to try. When I discovered Buddha Teas, my tea-loving heart rejoiced! Because there are so many types and brands of teas available, I like to make my tea time special. Buddha Tea does just that for me!
I cannot tell you how nice of a Sunday I had–okay well maybe I can. It was a beautiful day! Sunny skies, melting snow, warm temperatures…sigh. It is glorious. For breakfast, I had half a grapefruit sprinkled with stevia and cantaloupe with ¼ cup cashews (not pictured). I always pair my fruit with a nut or fat of some sort to prevent drastic blood sugar spikes.
Classes resumed this week for me! Yay college! I actually am really excited about this semester. What has changed? The more difficult classes? Longer and busier schedule? Nope! My new outlook on life! Remember my New Year’s Resolutions? Yeah, those are still going strong–if not stronger than ever!
Y’all, I could not be happier this morning! Can you just look at these Texas waffles? Pure heaven! I cannot tell you how excited I was that these turned out the way I had hoped! Yayayay! Rejoice with me! You can take the girl out of Texas, but not the Texas out of the girl y’all!
Back in Colorado, but my breakfast (brunch) game is stronger than ever. Maybe it is just because classes haven’t started yet and I am feeling energized and creative!
