Yesterday was just one of the many weekend days I spend just hanging out and doing whatever comes to mind. No schedule, no limiting obligations, no commitments… it is so nice to have days and weekends like that. This is my last weekend to have such an agenda–rather lack of agenda since classes resume on Tuesday to kick off the spring semester. As my last free weekend, I decided to do a home workout and make sweet potato chips to enjoy.
Who knew how easy hummus was to make? So economical too! If you are a common cook, it is very likely that you have all of the ingredients already stocked in the pantry and fridge, maybe you just have to pick up a can of chickpeas and tahini, but that it! Here is my base hummus recipe, but feel free to add in some avocado or roasted red peppers to create a delish take on your hummus!
I am back in Colorado and back at the Rec! It takes some getting used to after being at my smaller gym in my hometown. To me, it is more intimidating with all of the students that pretty much live at the gym. I know it is silly, but some of those big guys look like they could crush (and I am probably right…) One of my resolutions though, is to stop being afraid of failure. I often do not try new things for fear of being made fun of and failing, then being made fun of some more. But, I know I have already grown a lot this year and I feel more confident–so who really cares anyway if I look like a fool? It’s my first time and I failure is part of the process of success! Have a sweet tooth? A sugary craving sets in and you start to worry your self-control is waning… Trust me, I know this feel allllll too well. That is why I learned to start snacking smart and choosing healthier options when it comes to my sweet tooth. So, what do I do when it comes to smart, healthy snacking?
Christmas eve and Christmas this year were very different. I cannot think of a tradition that was followed to a tee this year. I guess that is what happens when you grow older and you are the youngest in the family. The Christmas season this year started out with a bang–maybe too much of a bang though, because my spirit slowly faded. I felt like Cindy Lou Who from the Grinch. I should have sung “Where are you Christmas” on repeat. Continue reading
I took my last final Friday morning. After a grueling week of being held up in the library and stressing, it was so nice to finally be finished! Now all that was left was packing and waking up at 3:30 am Saturday morning to catch my flight. All that was standing between me and Texas was the dreaded packing… oh, how I despise packing… Continue reading
I know that everyone is busy getting ready for Turkey Day. The holiday can bring lots of stress instead of enjoyment, so why not alleviate some of that thanksgiving food prep panic and make some items ahead of time–like my Pumpkin Protein Pie for instance. Continue reading
Let me just apologize for being a bad blogger lately. My October has been filled with all sorts of (vegan) food, festivities, fall, and lots of studying. I know it is no excuse because blogging does not take that long, especially if I just pop a few recipes online (I have so many to post from Vegan Month). For now, I will do a recap/summary of my October, then I will begin posting recipes again. I wish I had more workouts to post lately, but unfortunately, I have to admit I have fallen behind on my health and fitness since the summer. I do not see this as a failure, though, just another opportunity to overcome a challenge. Continue reading
Happy October! Fall is upon us. The leaves are changing, the air is changing…and so is my diet. What? That is right. I am challenging myself this month–all 31 days to go vegan! What is veganism? What brought this on? I will answer all of these questions soon I promise! If you feel like joining this journey with me, comment on this post and follow along and we can support each other! Cooking dinner during the week (especially a week during exams) can sometimes get pushed on the back burner. That is why it is nice to have quick, simple, and healthy recipes to make for dinner. One of my go-to’s is a Dairy-Free Avocado Quesadilla complete with salsa and Blue Corn Tortilla Chips.
