It may be Spring, but in Colorado, that still means cold, windy and/or snowy days here and there. And when that happens, I am in the mood for something to warm me up, so how about some chili? Thai Turkey Chili to be exact! It’s so good. Good things can happen when you have some random ingredients laying around.

good great week! The final week of my Whole30 and I honestly feel on top of the world. My food has been in control. I have learned what works for me. I have my “sugar dragon” under control. I woke up this morning still starving from empty refrigerator after having spent three weeks at home in Texas. I pushed through it though as I knew it was just a matter of a few hours before I hit up the grocery store after the gym. All morning I just planned out my meals for next week and made my grocery list. I am trying to be better about meal planning and sticking to my lists. I did make a smoothie this morning to get me through my workout and shopping.
I am super behind on posts, but I plan on catching up this week! I have been so connected via Instagram and now snapchat, that sometimes I forgo the longer posts. I received a lot of request for my miso soup recipe that I made this weekend, so I figure I will start with that! Miso soup is my go-to soup when I need something quick and tasty or when my digestive system is out of whack.

I am back in Colorado for the summer and feelin’ the summertime love! Everything is so green and sunny and hot and I am in my element. So far my summer has consisted of training, fresh meals, pool time, good friends, BBQs, 4-square, long bike rides, nights out in the town and even summer school is more enjoyable. It is crazy to think that July will be here next week–my summer bucket list is still so long! I am on a good pace however, and I am enjoying every moment in the mean time. Continue reading
Yup. That is chicken. Take away my label as a “pescatarian” or a “vegetarian that eats fish” or a “vegan who eats fish/eggs/honey” or whatever you once classified me as. The truth is, I was always bothered by those labels anyway because one word cannot define my diet—and my definition of the word diet, the way it should be used.
