This has been my midmorning snack for the past few days. It has helped me overcome my cravings for more harmful sugars. Coconut Chia Pudding fits the paleo requirements of being dairy-free, grain-free, and legume-free. It is so simple to make, versatile, and oh-so-delicious.
I know the “pumpkin season” has come to a close (Happy December!), but I could not not share these Pumpkin Protein Donuts. They are healthier than normal donuts, think baked not fried and packed with protein and real pumpkin puree. Yum! I have recently moved and although packing has never been a favorite of mine, this move was much easier than expected. The packing, the transporting, the carrying, the unpacking, all were not quite as gruesome as I recall. Maybe it is because I am use to moving every year and I have learned to make things easier (maybe I’ll do a moving tips post later). I am not quite settled in yet…well, that’s an understatement. If I am gauging this off of the level of groceries in my pantry and refrigerator, then I am dogging it. One of the things I have learned from moving is this: it is a pain to transport food (in my opinion)–having to keep it all cold/frozen, worrying about spills and glass breaking etc. That is why this time, I hadn’t been grocery shopping the two weeks prior to moving–and confession…I still have yet to go. Needless to say, my food intake has been all over the place and it’s killing me and my workouts, but it has given me plenty of opportunities to use what I have and get creative. The flooding is gone and the mosquitos, humidity and heat are here! Confession: I love the heat and the humidity. Call me crazy, but I am in my element. I have been taking advantage of the weather for my workouts for sure. Even if it is high noon or 3pm, I will get my booty outside. The sun, heat and humidity doesn’t bother me, I just make sure I am hydrated. The mosquitos on the other hand…those things can just evaporate. Yes. Yes, this is another breakfast post. I make a lot of omelettes, but this is by far one of my best yet– the tomato basil omelette! Oh yum! Last week week when my parents came for a visit, we went to a local diner. The wait was long, but well worth it. Everything was so fresh and tasty to give that homey feel. I ordered an egg white omelette there (surprise), but I got the most unique one on their menu; it had spinach, tomatoes, almonds with a drizzle of vinegar. It was delicious! Here was my breakfast from the other day. It consisted of 1/3 cup of liquid egg whites, raw almonds and Applesauce Oats.
♦ 1/3 c oats (can be old-fashioned or quick; I use a combo of both)
♦ 1/3 c unsweetened applesauce
♦ cinnamon to taste
Just mix all ingredients together and microwave for 1:30-2 minutes. Top with more cinnamon if desired and enjoy!

As I have probably mentioned before, Spring is my favorite season. I love Easter, getting outdoors, the sunshine, the flowers, etc. This post is just my ode to Spring and what I do to get out and enjoy it. When I moved to Colorado a few years ago, my outlook on Spring shifted slightly–snow?? Really?? Oh well, even random snow storms can’t dull my Spring spirit.
