day twelve | fat outta hand

day twelve | fats outta hand | Journey for Jessi

So day twelve of my Whole30 and day two of my new training program and I have begun to notice something…  Where my carbs at?  Don’t get me wrong, I have NO adversity to fats.  In fact, I love fats a little too much.  I am a nut junkie, an avo connoisseur, I practically bathe in coconut oil/milk/flakes.  Because I am so in tune with my body now,  I realized that whenever I eat more clean, I tend to crave more fats, healthy fats, but fats nonetheless. day eleven | chocolate craving

week two: day eleven | Journey for JessiDay eleven just kinda hit me.  Like, “whoa!” is it really day eleven.  According to the Whole30.com stats, day ten and day eleven are when most people quit the Whole30 challenge.  Well then, I guess I MADE IT!  I am home free, right?  Wrong.  I only hoped.  Today after dinner, after my first day back to work in three weeks, my first day on a new training regimen, I could have used a little square of dark chocolate.  Continue reading

day ten | relaxation

week two: day ten | Journey for JessiNot much to report on day ten.  Kind of a boring day in the blogging world, but I have to say, I do love my Sundays. Meal prepping, cleaning, odds and ends, lounging about, stretching, mobility work, etc.  I will just go through my day in terms of eating real quick, then I am off to another one of my favorite Sunday activities: an epsom salt bath soak while reading a book! peanut butter smash cookies

peanut butter smash cookies | Journey for JessiThese cookie are so so so so so simple!  Pretty amazing.  Just three ingredient, yes, three!  And they take just 10-12 minutes to bake.  Yesterday, I made these for a friend.  I chose them because 1.) they are simple and quick and 2.) since I’m transitioning to paleo, I am attempting to get rid of my huge jar of peanut butter. day nine | willpower

paleo challenge | Journey for JessiDay nine.  Whoop!  I survived the Whole30 at my work holiday party!  Now that’s an accomplishment!  I guess I will start with the beginning of my day though.  Surprise!  I woke up and went to Crossfit ;).  Who would have guessed?  I used to bring a shake for during my workout to sip on throughout, but it is for sure NOT Whole30 approved.  Fructose anyone?  Great for fuel, but I have realized that not every workout needs the same amount of fuel.   Continue reading

day eight | a smoothie & sliders

week two: day eight | Journey for JessiI woke up this morning still starving from empty refrigerator after having spent three weeks at home in Texas.  I pushed through it though as I knew it was just a matter of a few hours before I hit up the grocery store after the gym.    All morning I just planned out my meals for next week and made my grocery list.  I am trying to be better about meal planning and sticking to my lists.  I did make a smoothie this morning to get me through my workout and shopping.

day seven | travel

week one: day seven | Journey for Jessi
It’s been a whole week on my Whole30!  Today was a travel day for me, in the air and on the road back to Colorado. I had plenty of time to read and catch up on my podcasts which I am very grateful for. I stayed paleo all day too. Traveling is no excuse to eat like crap. Continue reading

day six | lazy days

week one: day six| Journey for JessiNot much to report on day six of the paleo Whole30 challenge.  It was a rainy day my last day here in Houston.  I mainly was a couch potato I have to admit.  I didn’t even get my steps in for the day until I hit up the treadmill an hour and a half ago.  I mainly just snacked on veggies, fruit, nuts, and meat all day until dinner.   Continue reading

coconut chia pudding

coconut chia pudding | Journey for JessiThis has been my midmorning snack for the past few days.  It has helped me  overcome my cravings for more harmful sugars.  Coconut Chia Pudding fits the paleo requirements of being dairy-free, grain-free, and legume-free.  It is so simple to make, versatile, and oh-so-delicious.

day five | out & about

week one: day five | Journey for JessiYesterday wrapped up my day five on this paleo challenge of mine including NO coffee too (to cut back my caffeine after abusing it during finals week).  It did not seem to take me very long to adapt to this program (Whole30). I think the key is to stay busy, occupied, and well-hydrated. Continue reading
