Being from Texas, the amount of Mexican food consumed during my lifetime is quite substantial. The only thing that put a halt to all the endless chips and salsa, Freebirds burritos, and sizzling fajitas galore was my decision to attend school in Colorado. The Mexican food is sub-par here and it is one of the things I crave when I go home. I still get my fix from time to time with a Chipotle bowl from time to time, but I like to stay away from the fast food. Up there on my “hard to resist” list? Chipotle’s Cilantro Lime Rice.
Thank goodness I learned how to make my own! It is so easy too! I make a batch of this on my meal-prep Sunday for the week and add things like black beans, shrimp or avocado in the mix.
Ingredients:
♦ 2 c brown rice
♦ bundle of cilantro (to taste)
♦ 1-2 limes
♦ 1 can black beans (if desired)
♦ shrimp (if desired)
♦ diced avocado (if desired)
Begin by cooking your rice according to instructions, whether you are making raw rice or instant.
Chop the cilantro.
Squeeze lime juice over the rice and mix well.
Add the cilantro to the lime rice.
Toss rice together. Begin cooking beans, if desired.
Toss the beans into the rice along with cooked shrimp and avocado, if desired.
