Y’all, I could not be happier this morning! Can you just look at these Texas waffles? Pure heaven! I cannot tell you how excited I was that these turned out the way I had hoped! Yayayay! Rejoice with me! You can take the girl out of Texas, but not the Texas out of the girl y’all!
Ingredients
♦ 1 c whole wheat flour
♦ 2 tsp baking powder
♦ 1/8 tsp salt
♦ ¼ c melted coconut oil (can use applesauce 1:1 for low fat)
♦ ½ tsp vanilla extract
♦ 7/8 c unsweetened almond milk
♦ 1 egg white
♦ ¼ tsp stevia
Begin by combing the flour, salt and baking powder in a medium bowl.
Combine wet ingredients (minus the egg) into a separate bowl.
Grease/pre-treat your waffle iron according to specific instructions. Texas waffle iron highly recommended, but I guess it can be optional ;)
Beat egg white and stevia until stiff peaks form.
Combine the dry and wet (not egg) ingredients together.
Carefully fold in the egg white mixture.
Pour batter into the waffle iron.
Cook according to iron instructions.
Revel in the glory that is a Texas Wheat Waffle.
I served mine with PB2 and half a sliced banana.
