On to the finale of my summer “vacation.” I say “vacation” because I was vacationing in the colorful state in which I attend school, Colorado. I am so blessed to call this amazing place my home away from home. The beauty and wonder never ceases to captivate me. On the final day in Glenwood Springs, my family and I went off the beaten path to a more than less popular hiking trail, but it did not disappoint by any means! It was full of gorgeous views of the river and falls and if it were not for the Grizzly Bear encounter (yes, GRIZZLY BEAR!!!), then we would have kept hiking the afternoon.It all began with an easy hike down the road to the site of the official trail.
And this was taken minutes before the Grizzly encounter! It was amazing in hindsight, but so terrifying in the moment! (That is why there is not picture sorry!) We stumbled upon the bear (more like he stumbled upon us). He was only one hundred yards away, eep! I thought we were goners. Fortunately, Mr. Bear was not threatened or hungry, and we were able to escape quickly.
After our descent to civilization (almost), we found some more welcoming animals and I had to say hello. Fun fact about me: I cannot control my laughing whenever I see cows :) After my family and I got back into town, we were so hungry. Driving through town, something caught my eye…
I ordered the Avocado and Shrimp Salad with the dressing on the side. It was to die for! I know it seems crazy to say that about a salad, but what can I say? I am a veggie lover!
Well, that just about sums up my Colorado vacation after driving back into Fort Collins. I am slowly catching up to real time now. Stay posted for more recipes, meal ideas, and workouts!
